This program is really impressive. Was considering applying it to a pet tabletop project, but it seems that the map layouts are all fixed with Discovery locations even when loading vanilla game files. I take it this is something hardcoded and can't be changed?

Yes, basically right now the navmap is loaded from the instance available here on the forums, which obviously uses data files generated from Discovery. I plan to rewrite some of its code to load data files locally but this is quite complicated.
As well as making Wingman work with other mods/vanilla, this improvement would also mean that Wingman's maps are always guaranteed to be up to date (right now the navmap needs to be manually updated by @Error / @Alex. which typically introduces some delay after a new Discovery version is released). There is an issue to track this.

So, one of my favorite features of the old Freelancer Companion was the ability to plot the trade route and have it show in text on the screen. Is that available on this fantastic app, or is it something I'm requesting just now? Or does a user guide exist for showing me how to make that route show up in Wingman?

you also cant filter systems such as Alaska which kinda appears in all routes and mess it up
