How come I shoot down a ship, use the traction beam to pick up whatever has been dropped but when I return back to a base there's no item in the hold showing?
Are you sure the stuff you picked up wasn't guns, equipment, ammunition or nanobots/batteries? These will immediately show up in their respective tabs, or be added to your supply in case of bots/bats and matching ammo. Only actual trade commodities will appear in the cargo hold.

After shooting down a craft and the icon appear I press and collect whatever item is dropped. I do not know what the item is until I try to sell it
Only trade commodities will show up in your cargo hold. If you loot a gun, it'll be in the guns tab. If you loot a thruster, it'll be in the equipment tab. If you loot missile ammo, it'll be in the ammo tab. Check all of the tabs to see if you have any new items.
Moreover, your scanner window has a bunch of icons above where it displays ships/stations. One of them looks like an open chest. If you click it it'll switch the scanner to show you nearby loot only. That way you can see what the ship dropped before you tractor it in. You can even tractor in individual items by selecting them and clicking the tractor beam icon on the bar above the scanner. I'm not sure if there is a hotkey for it.
