Celery hearts.
They tear the innocent celery out of the ground and away from its family. Not happy with that they do their best to keep the celery alive si it can feel what comes next. Out comes the knife to carve the poor celery while it's still alive. Should see how carrots get treated. Skinned alive, yup, skinned alive...
