I enjoy them, especially roasted with some oil, herbs, and lemon at the end. The problem's usually in overcooking (like boiling/steaming the hell out of them), which makes them mushy and brings out a strong, bitter taste some people dislike. Try removing the outer leaves if they're tough/discolored and cutting away more of the stem. When in doubt, cook it with bacon.
