If you want a real challenge, use the Werewolf; it's one of the few fighters that has a torp + CD slot. Basically, it's a jack of all trades that's got a ton of hull to withstand transports shooting at it AND does decently against bombers and slower VHF's in combat. Of course, it has no SNAC, so the challenge is to be creative with your pirating because most transports will laugh at your puny little guns.
But that's just me. I find extorting people through alternative (read: nonviolent) methods most rewarding.

I just set up my NovaPG bomber, and I got Train CD, SNAC, Cannonball (for fighters) and the best dragon guns.
But it just isn't good enough, what guns can I use as a Dragon that can get through the shield and hull of ships?
I also got a Corsair Gunboat, some of you may of seen it before, the Grande Impuesto. I got a mix of Razors and Infernos on it and it works pretty well, I can even take care of the NPC fighters that come after me. Although I have a Order turret and a missile I use the Razors and Infernos to deal with the NPCs.

Um... if you trying to blow up transports, any guns will do. If you're fighting other fighters/bombers, well, different guns for different purposes. Is this a piracy bomber? or a PvP bomber?

Use shieldbusters on bombers, as it makes you more effective at your task - killing big stuff.

@ Recoil: Join the outcast, come to NY. We set up blockades sometimes and have a usually decent time.
As far as ships, I use the Roc and a Slave Liner. Roc if there are more law-dogs around. It all really depends with what you're comfortable in.
