I'm colourblind to several spectrums - so I really have no say on this.
But I hear that Hokkaido, when viewed from, say 50K in any vertical direction from the Plane, is one of the most vibrant star-scapes you will see.

Those are my favourites. :P All look cool so I won't name a specific, but I think Guard systems generally look cool.
