I don't currently have Skyrim installed, but I generally try to create a sort of 'perfected vanilla' feel more than anything. So no wonky anime-style hair and/or armor mods and such. Some sort of overhaul to improve leveling (any perk overhaul is a good overhaul, if you ask me). Something to make combat more lethal especially at higher levels to avoid fights becoming a contest of damage sponges.
I never did find a good mod that unlevels Dragons and makes them a fun challenge without just giving them very high damage and HP levels.
