I make my own list:
Best Light Fighter: <strike>Penumbra</strike>Conundrum Light fighter with almost no armor, agility like VHF, and 6 guns. What more can you ask for?
Best: Heavy Fighter: Executioner Any [LN] Ensign will tell you this ship is beast - especially when you have 2 missiles and a torpedo on it.
Best: Very Heavy fighter: Insurgent Virtually unlimited powerplant, pretty good strafe for side-to-side boxing. Very satisfying kills earned when you strip an opponent's shield and MR them in the same pass.
Unfortunately, torpedo mount is borked, and MR only fires below horizon.
But is np.
Best Cruiser: Rheinland Pirate Cruiser I saw one with a Cap 8 killed by a Manta and a Bottlenom. What more can I say?

Best Freighter: For transporting stuff: Camara, for pirating: Bactrian. Grizzly isn't bad too, it just has a small cargospace though...
Best Transport: I like trains.

Best Cruiser: Rheinland Cruiser or Kusari Destroyer
Best Battlecruiser: BHG BC
Best Battleship: Bretonia Battlefish or Liberty Dreadnought

LF: Difficult too...Maybe Loki or Phantom, but really...I don't know.

Freighter: Dunno...really...There are some good looking around, but can't decide which is the "best".
Transport: Probably the Shire.

Best Light Fighter: The Loki or Nomad LF takes this one. Anything that fast with the ability to fire a razor is simply insane.
Best Heavy Fighter: The bayonet. Excellent in a furball due to being tiny and insanely fast, excellent in a duel due to turn speed. Coupled with rogue, outcast or lane hacker guns it does insane things. A great razor platform as well.
Best Very Heavy Fighter: There are a few ships which are extremely close at the top of this particular pile.
The Sabre is a good, solid all round ship with plenty of firepower and the pace to evade nicely in a furball. Extremely popular due to it being open for all to use, and being extremely easy to fly. This is the ship which probably requires the least work to get a good result.
The Katana, small, insanely fast, nice gun positioning. Has low armour however, so you have to watch for instakills. Also everyone knows red ones go faster, so it's gotta be better than the...
Chimaera... Basically, see the katana but with more armour and a larger plant. Not quite so fast, but stiill very easy to evade in due to it's size.
Black Dragon and the Blossom are pretty much the same ship. Both extremely good in their environment as Sina says. Fast, small and rather annoying to shoot at.
The Wraith is an awesome ship. May not be 'small' in Mjolnir's terms, but the shape of it makes it very very hard to hit. If flown by a competant pilots, this thing is insanely good. The turn rate is awesome, and the large powerplant make it a great ship.
The Titan is an awesome ship. Heavier than any of the other VHFs I've mentioned, it makes up for it by being a really awkward shape to shoot at if flown by someone who's worked out how to dodge in one. Massive powerplant, dishes out plenty of hurt.
Best Bomber: The Bergelmir rheinland bomber. It's tiny, not slow, and has a larger plant than some bombers which are twice it's size. Balance trololol.
Best Freighter: The Grizzly. Also worth mentioning the Ragnar.
Best Transport: Pirate Train. It's small and has a lot of cargospace, along with seven guns.
Best Gunboat: Scorpion. Five nomad turrets and three battlerazors all able to fire 360 degrees on a small sized gunboat with fast turning? Yes please.
Best Cruiser: Depends on what you intend on using it for. For taking down heavy caps, Liberty seige cruiser (it's pretty crappy at most other stuff though)... For more general cruiser use, Kurasi destroyer.
Best Battlecruiser: There are no good battlecruisers. Although out of the whole lot I'd pick the Geb. It's got a thruster, battleship shield, and can fire ten cruiser battlerazors at once.
Best Battleship: Almost impossible to say. The Osiris, Rhienland BS, Kusari BS, Liberty Dread, OC Dread, and Marduk are all great ships in the right situation.

Best Light Fighter: Haven't flown the Voidrunner in ages, so I wouldn't know about that. Of those I have flown, Libbie takes the cake (though the Tiger Shark is also fairly awesome due to its shape).
Best Heavy Fighter: Haven't flown the Marauder yet; I understand it's fairly decent. Currently, though, my favorite is the Switchblade.
Best Very Heavy Fighter: Sabre all the way.
Best Bomber: Waran all the way. Seriously, that things a hyper-compact Barghest. 'Sepic.
Best Freighter: Grizzly or CSF. Both fairly nice ships.
Best Transport: Armored Transport. A SHF with transport shields and guns? Ohyus.
Best Gunboat: Liberty Gunboat, even now that its FG has been nerfed. Still an incredible ship.
Best Cruiser: Liberty Cruiser. Not for the anti-capital power, either; that's just a nice bonus. The LSC is so incredibly tiny that it's nearly impossible to SNAC, and its size also makes it a great Solly ship. And with anti-cap power on top of that? Epic.
Best Battlecruiser: Bullhead. It's the only decent BC with a thruster, and really, a BC without a thruster is useless. Slap some cruiser missiles, LMs, pulses, and flak (a must on a BC; the lack of the BS turrets for flak are why the Geb is kinda pointless) onto it and you're golden.
Best Battleship: Controversially, the Spyglass. Yes, I know it has a horrific hitbox twice its own size. Yes, I know it's so long that a Solaris in the middle won't even reach either end of it. Yes, I know it's a medium battleship the size of a heavy battleship. And yet, despite all these things, it has a very few (three, to be exact) advantages that, if properly used, will bring it out on top even against terrible odds. What are these advantages, you ask? Well, I have to keep some secrets.
That said, that thing really punishes you for mistakes. If you mess up, you die, or you lose half your hull at best.
