Kerbal Space Program- A space sim where you design your own ships. I've heard it described as 'NASA by trial and error', which is very accurate.

Agreed, although the newest one (X:Rebirth) was sort of a let down. I miss the ability to change ships, rather than just being able to command the others from the Albion Skunk.

I'd also recommend FTL: Faster Than Light, which recently got a fairly big content update. It's more about resource management and strategy than actually flying. It's also a roguelike, so a lot of the time, you're at the mercy of the Random Number God, which can make it a piece of cake, or a tormentous inferno, or anything in between.

Yeah I haven't played rebirth but I heard a lot of negative things about it. You can't go wrong with X3 though.

Orbiter.

Once you are at it, you'll see why it is named that way.

Besides, I am doing stellar system addons for it.

Just googled it, it looks pretty good. Going to give it a download.
