You use the miner guns instead of the turrets.

Surveyor is probably the best ship available for group mining.
Mount 5x Small Mineral Extractors for best results.
When set up like that it fills up a Shishapangma in less than 3 minutes.
Don't forget to mount a Train CD. In case a pirate appears you disrupt him while the transport makes a run for it.
