I believe there is a way to do it with Adobe Imageready. I still have yet to unlock it's secerts however. If you have CS2 it should come with it, if not, I can do some reasearch for you and see what I come up with...

For making GIF's the best program is, again, Imageready.

EDIT: Check the link here. However, I suggest reading the other two tutorials first before attempting to start this one. That should help you get started on converting AVI to GIF.
