Scotland is decent for living costs (you wont get stripped dry of money on rent like in the south), but be careful with those jobs. Have a safety net of some sort (like savings or something) because cities with a lot of universities especially generally have tons of applications per job position so it might be a while. Gone are the times where you can for example walk into a bar and get a job straight off, now it's a bit of an ordeal with the waiting and the experience. The only (almost) sure fire way to get a job is to have a friend who introduces you into one... which is why it's useful to make friends at uni early on I guess.

500 quid per month is gonna be sticky, but maybe it's doable. Expect half of that at least to be eaten by rent, and another 50-60 by gas/electricity (though most likely more). Rest for food + expenses, you're going to have to watch your finances closely.

For a part-time job, at least over here in NI, I and a lot of people my age are having success with part time tutoring as a means of making money. You can easily charge £30~ an hour for one-to-one tuition, taking teenagers over GCSE Maths, Ad Maths, Sciences etc. The demand is always there from students anxious to get back into sixth form. Hours are flexible too, of course.

Since you're not from the UK you'd probably need to look up exactly what's on our GCSE syllabuses, but it's pretty basic stuff across the board. If you provide printed out worksheets and other such gubbins as well, things look even more clean-cut.

You said you are from the EU right? If so, that means if you apply for a Scottish Uni you only have to pay the same as other Scottish students are paying and SAAS will covers your fees. So this means your tuition fees will be FREE if you go to a Scottish University!

I nearly went to Edinburgh myself (am currently studying at Aberdeen). It really depends on what you want to study though. Although Edinburgh is one of the best research universities in the UK, a few years ago in this nationwide student satisfaction poll Edinburgh came right at the bottom. Was in the bottom 5 or something. This was likely due to that lectures were more concerned with their research than being helpful to students. The president was furious and has been trying to turn that around though. All that said it is still an extremely good university.

So just to clarify, if you are a citizen of a country in the EU (apart from England, Wales and Northern Ireland) and hold a passport, then SAAS will cover all of your tuition fees if you go to a Scottish university! Might be worth taking into account.
