As far as i know most if not all the small pockets of mining inside Gallia are gone

There's a lot of scrap fields for Scrap Metal, that can be mined, throughout Gallia; Zurich is pretty good for Molybdenum and refining (Sector 4-E). There's Hydrocarbons being mineable (not capable to be mined by large ships, so freighters only (remember that most of the freighters can have a Mining Array), I think it hasn't been changed), in Planet Tonnerre in the middle of Burgundy, in the middle of the 'planet' (system Planet Tonnerre Atmosphere).
Nearby/Around Gallia; there's also Tau-23's Niobium fields (Sectors B-2/3 & C-2) and Beryllium (Sector 6-E). Not really ore but there's also Scientific Data that can be mined at the 'north-west' in Tau-23, with a ship capable of 'mining' Scientific Data; Tau-23 which isn't Gallia proper, but just nearby and via a jump gate, it is restricted however, so you will have to request an authorization to use the jump gate if you aren't using a Gallic Corp/Navy/etc. ship (you can see it, and post, in the Gallia sub-forum dedicated to it). There's also some water fields but yeah, Water (Tau-31's entire system, if I recall correctly, for example). I guess you can sell it for like 10c/u at stations, or for a POB. Scrap metal is useful for POBs that recycle it.
Essentially, I think Gallia really is a key piece for "HRC", or high-value commodities, such as contraband (Nox, or Gallic Enfer Blasters, for example) or expensive investments (both time & money), such as Passengers, to and from Gallia, with Wine or other to fill up the cargo at max. capacity.
You can still mine somewhere like in Rheinland, or even in the Omegas, and use a Gallic ship/Corp. ID.
The lore reason for Gallia being devoid of resources (except Zurich), is that everything has been mined at this point, esp. after the Gallic Wars. Which doesn't make much sense due to space's richness in literally everything, but whatever.
