About server

I have small, noob question about this server... about all servers!:)
And sry for my bad english:)

I was looking for good server some time (and ive found what i need - Discovery!) but i am still curious about one thing:

WHY BEST SERVERS CAN HANDLE ONLY 128 PLAYER MAXIMUM?

Its impossible to create...hmm... server emulator or something what can handle above 128 players?
