But yes, echoing others; Baldur's Gate is awesome, though it and it's sequel have not aged well.
Neverwinter Nights and it's sequel have done so much better, and given your mention of third person these would suit you better, and they're just great games regardless.
Keep in mind before you play though, that these games are based on Advanced Dungeons & Dragons, which may or may not appeal to you.
It's already been mentioned, but for good measure ... Baldur's gate II. It may be a bit dated compared to Skyrim online, but a fantastic single player game that is only made better with friends. I've played the game for 9 or so years and can still install it and crack out.

I don't know if it counts in here, but I would suggest Splinter Cell: Double Agent
It has a Co-op, and i tend to consider it having some rough RPG elements
