There have been many great individual games, many of which are named in an existing thread below this one, that stand out but there have also been some pretty legendary series of games as well. If I had to pick an absolute favorite mine would be the Baldur's Gate series. The first game is amazing because even a lowly bear can take out you and your party and you always have to be on guard. I also enjoy simply wandering around the wilderness areas and seeing the various interesting encounters(The Red Wizards, the dog turned demon, etc...).
Baldur's Gate 2: Shadows of Amn and Throne of Bhaal are probably the best RPGs I've ever played. The characters and story are utterly captivating and the environments are extremely detailed and thus draw you in. There's a lot of diversity to your player character and with the numerous kit mods installed, you can come up with some very interesting RP scenarios. The combat may be my favorite part because between abilities and spells, there are a multitute of options. Even more so when you realize you can combine these options; for example using Tenser's Transformation on a fighter/mage or casting invisibility to backstab. I'm not really a fan of D&D and have never played it, but nonetheless I find the Baldur's Gate games to be my favorite. Anyone else have a particular game series that they enjoy above all others?

5. Nova Logic's 'Art of War' Series (think thats what its called, bunch of high quality combat simulaters.)
