Some of them can if I remember correctly (Stork for example), I am not sure about the Mastodon, however.

Mastadon has Carrier Bay slot, just in case.

What happens if I dock on a carrier, I log off and the carrier jettisons me? Where will I spawn when I get back into the game?

Well. When you dock with somebody, youre moved to an invisable base 100k above the sun in the system you docked in. So, if you docked in new york and you log of, if the guy with the module jettisons you, youll spwan by the invisable base 100k above the plain in the system that you docked in. I hope that helps.
