Why is it that random back water skirmishes make everybody lose their minds, but major wars bore people?

Because the majority of those major wars rarely have any player input and are often plots almost entirely sourced by the story team.

Look at the most active and engaging points of Discovery's: they've all been the result of player sourced, organic RP and activity. Often they're approaches to the mod that exist outside of convention. In the end, they leave a lasting roleplay impact. It's something to learn from.
