Dont forget, that there are even "good" pirates. But you have "defined" the "bad" guys pretty well. Problem is that a lot of people get a gunboat, some pirate ID and go all like "Now I'll make A LOT of money wohooo" and it ends up with "5mio r u die". Well, what is there to say, just kill (mataphor) them all.

You bring up excellent points. I don't particularly like being stopped in the asteroid field between New Berlin and Brandenburg. I get antsy there with the 3-8 Wilde fighters flying about. When I pirate stops me there, it's like saying, "Even if you pay me, you'll blow up." It's disrespect to the trader and abuse of the game.
Another thing: when pirates stop you and all they do is demand money and threaten to kill you, they clearly want to blow you up. If the pirate RPs with you, that's when they're deserving of a bit of cash.
Of course, this is my opinion. I don't know if anyone shares it.

They don't understand that they can make more money trading or smuggling.

Especially when the trader is hauling something that benefits your faction.

I often don't rp with traders because the blokes aren't willing! I patrol Sigma 13, occasionally camping near the Berlin JH, and almost every single person who I come across ignores RP, tries to run, and with a sigh of disappointment, I disrupt the tradelane and SN them, and even though I told them my demands with rp mixed in the *******s say after they are dead "You *******! You didn't make demands, 1 r going to sanction u, n00b." And I am tired of it!
Another type of Pirates I hate are those that lie.
Ex: I got stopped once and a guy took down my shields demanding 3 million to pass, I gave him the money and proceeded, then he fired a CD and damaged my hull even more saying that I wasn't done yet. Even though he blatantly said 3 million to pass, he wanted me to drop my cargo, I turned around, let go of my cargo, shot it, then he killed me, to be expected but still, he was being an arsehole.

But the intent isnt to get the trader to pay, is it? I thought a pirate making a demand was more akin to opening up an RP window for the trader to respond in.
In fact, most of my pirates no longer demand cash, and the only ones I get really insistent on are the ones encountering the silent Diamond-Niobium traders in Chogoku...
Remora: Unfortunately, it's not just usually the pirates fault that pirating is generally bad, especially around high traffic areas. I mean, many times you have the trader just silently keeping engaging cruise while you keep CDing him. Other times you stop a trader, you ask to halt, you ask for a donation, and you get silently shot at. And yet other times you have a trader who opens a trade dialog with you, then tries to engage cruise with the trade dialog open, then once you stop him again and kill him he cusses you out in private chat. And not to mention the ones that ask you to kill the Wilde that attack them, then they engage cruise and go "haha sucker" in system chat. All of this is of course acceptable, but it also gives a lot of people an itchy trigger finger, or the desire to nab the traders in situations they can control (like the jump gate thing). It's really hard to trust most traders, and it's the fault of everybody in the end.
So the best thing good traders can do is avoid the high traffic areas like Sigma-13 if they want to get robbed by somebody who is not annoyed already by the sheer volume of people passing through.
I recently got held up in my well-armored Pirate Transport in a Hacker Slipstream with two Lancer missiles at Rochester. I've killed bombers and gunboats in this thing.
I gave him a tenth of his demanded fee and ten seconds to get lost. He took my offer.
What can I say? I have a soft spot for pirates with cojones.
