I just hit level 42 - still on my first (rebooted) go through. I have not completed the main quest - or for that matter, any of the actual full, major sidequests. I'm closest with the Thieves Guild, as I just got the Skeleton Key - which I think I'm going to keep for a while. Nocturnal doesn't really need that key for a while, right? :)
You want something fun to do when you enchant, especially if you play a thief and/or assassin? Make sure that once you've got your Sneak up to level 50, you take the Assassin's Blade skill. Then enchant your dagger so that it will do soul trap. Carry lots of Black Soul Gems - or even better, get The Black Star (Azura's Star, but with the Nelecar bonus). Sneak up behind bandits, cut their throats with the 15x damage bonus, trap their souls, and have lots of enchanting available.
