As for faction races:
Nomads: Aliens
Wilde: Infested humans/hybrids
AI: AI
Rest: The human race. There is only one. And it doesn't include furries. Nor ponies.

the outcasts could however somewhat consider themselves a different race, but there's no real counterpart to those on earth.

As for RL-nationalities:
Rheinland most likely includes Austria as well, possibly Switzerland (assuming the war forced them to pick a side). I'm mostly curious where the Benelux belong to. I'd imagine Belgium went with Gallia but the others could as well have boarded the Rheinland or even Bretonia.

In case of the Hispania I wouldn't stretch it too far. It's generally considered a Mediterranean sleeper ship. Adding South America and the Arabs too is a bit much for me considering they already had to combine two ships there.
I'd also assume both the aforementioned groups would rather be on the Coalition side.
