Capship bridge windows are more or less just soft-scifi things, all the info should be relayed on screens and virtual viewports anyway.

Except most if not all capital ships in both freelancer's universe and our own capitals for Discovery have them. Some of the larger gunboats even have them. As seen;

It's a stylistic choice that Digital Anvil made. You'll notice most of their design is based off of art deco and gothic styles. That means big windows and being able to see things with your eyes to fully grasp the scale of it all.
