If you used the Widescreen trick posted on these forums, and your interface is still cut off, and you have a 16.9 monitor/tv... go to Microsoft Games\Freelancer\DATA and Open Camera.ini. Change the second line to:

Fovx = 68.88

Load into the game and it will be cut off... just undock, and It should be fine. Worked for me. Thanks goes to Richard_Rahl for this.
