Having more delays in speed would create a huge gap in the purpose of Fighters. Making suck more to be in a fighter for which this game started out to be.
Bombers...seems to be like the favorite child of Discovery because they get all the attention.
Bombers are just freakshow fighters. Nothing unique in their makeup. Thus why should the thrusters be changed? That is my question.
What makes it so important to post but NOT add a cool poll?
Bombers should drop things....many things...high yielding things...with trackers...and sensitive prongs.
Fighters and their ilk would still get rather nippy acceleration, though on paper the more mass, the slower the acceleration, so bombers would take a hit while gunboats and trains would be hardest hit.

Reverse isn't instant either in this scenario, and yes, balancing would be a pain.

Have the speeds change with key binding and such.
How easy it is to hit something going 50 m/s, 100 m/s, 150 m/s.... 250 m/s What would be cool is if thrusters got up to Cruise speed. OH WAIT! Isn't that the reason they created cruise drain? No more sniping at 400M/S:(
If we seriously want a speed control for afterburners suggest we have adjustable settings for our energy based weapons.
That would cause a lot of issues with balancing again in my mind, there is only so much this engine can take before it screams "Bloody rape!", at least, until Cannon shouts surprise.
