First get the UOP and the UOP patch (Unofficial Oblivion Patch) and yes, that's a patch of a patch (fixes more things that were broken that were missed in the first one). Then get OOO, like Korny said. From there, it's whatever you want to do. I've got a couple of companions, the mannequins, and some additional quest things as well as the Clock addition. Oh, and get the Always Pick Ingredients one.

And I have Joana's love shack, the nude spell, and a couple of the other adult only things, too. I don't go for many of the highly graphic ones like weather, as my computer won't handle those.

I have all of the official plug-ins for the Xbox 360 version, but not the PC - but that's because I had a 360 that could play Oblivion long before I had a PC that could. Frostcrag Spire is, IMHO, the best single addition to the game, no matter what character class you play.
