Dublin, Battleship Hood, simply for the atmosphere (And the race track is nice too.)
Freeport 2, 4, and 10, hell, the whole 37 system, again for atmosphere and AMAZING music. 2 and 4 feel nice to be at.
Shikoku for just how amazing and beautiful the system is and how many little wonders it holds.

I've been looking for trade routes that specifically go through through Inverness since the update! And... so far ... no dice.

Runner up for me is Allentown base in Penn, in the orbit of Planet Sayre and surrounded by dust from its rings.

Edit: I was [strictly] playing with Sigma-59 a while back, and created this scenery. (Don't worry, it's not a spoiler, just a spectacular view that probably won't make it into the GMG guard.)

I'm rather fond of the badlands, always have been... not really sure why. It's a beautiful little spot of chaos in the middle of an otherwise bland system =) The purples and blacks are soothing on the eyes, feels comfortable in there... strange that I dont have a rogue character.

I like the mystical feeling whenever I'm near the wreck of Freeport 7 in Sigma-17. And to think of that Sigma-17 was the only vanilla system that actually had three stars. Like it!

So many beautiful places in Disco mod that it's hard to decide. I like some parts of Omicron Alpha (the view from asteroid field), Omicron Iota, Pennsylvania (yes, seriously!) etc.

I love the various dark bluish/purplish nebulas... The Badlands, the whole of Ellesmere, Phantomland, Nomadland, etc., as well as the dark highly-radioactive smog/scrap fields in Texas.
