I think there are still many traders around, if you consider miners being traders too. Still doesn't change that there are very many pirates around, and there are MANY around, who think they can take everything.
I know iRP it isn't really wrong, but - it's not ALL about RP! FAIRNESS!, it's also about that! You know, the trader can't defend himself, so you know, he has to pay or he ... will face consequences - still you can't just run around and demand amounts which take so much from the trader that he doesn't even make money anymore - or even so much, that he LOSES money!
I'm for "excessive demand is pvp abuse". Why? Because it is.
The entire economic system on the server is heavily in pirates' favour. Pirates get the best ships, pirates get the best equipments. Traders don't have a chance because all transports have gimped power due to the massive shield drain and transport cannons are utter crap.
Escorts can't work the way they're supposed to, by the time they can even down the shields of the pirate their trader will be long blasted to space dust.
Lots of pirates just make insane demands so they can get their little blue message pvp fix, this isn't exactly helping either.

What this guy said. Also, arm yourself properly. Learning to fight in a transport is a necessary art for the lawful trader. Avoiding the pirates doesn't always work, and sometimes the demands are ridiculous.
Sacrifice some of your cargo for a decent cap armor. Learn to dodge, turn and aim -- and encourage others to do the same. If you're so inclined, practice with friends' gunboats and bombers -- it is indeed possible to kill a bomber in a transport, it just takes a great transport captain and a less-than-competent bomber pilot. Escorts are nice but not always feasible, but flying a boat with a CD and a lot of guns while grouped with another trader in a similar ship usually results in some very thrown-off lone pirates who suddenly go from predator to prey.
Ever see a competently-flown Behemoth in action? Those things are monsters. Now imagine the lone PTrans captain suddenly facing two of them.
Note that this doesn't always work. Sometimes you're gonna die if you don't pay. But your submission shouldn't be a foregone conclusion.
Ultimately, learn to frickin' RP your trader. it's always been that too many traders are faceless money grinders that exist solely to fund other characters. Stop this. It creates lazy pirates and apathetic lawfuls. Plus, good traders catch breaks from good pirates if the chemistry is right and it enhances RP all around.

Many trading factions have their enemies, so pick wisely. Don't just run for the one that gives the biggest freedom and profit, it comes with consequences
Long time player and very experienced Trader here.
Ways to avoid Pirates.
Use your "Long Range Scanner" (chat screen). Check the next system you are going to for names that you recognize as Pirates.
ALWAYS fit a 'Discovery Scanner' as soon as you can afford it. That few extra K's make all the difference when trying to avoid Pirates.
Using the 'trade lanes' is all well and good, BUT, it is *so* easy for a Pirate to sit halfway up a lane and keep disrupting it. If you happen to be using that lane....
Mix it up a bit and cruise from one Gate to another, sure it's going to take you longer, but you may just avoid a Pirate.
The same thing goes for Gates. You don't have to use them and finding the right Jump Hole may cut a big chunk of travel time out of your route.
There are a few other tricks I have up my sleeve, but I need to keep a few to myself, I still have a Trader. :P
Note that I DO still get stopped by Pirates.
I don't mind the Pirates who ask for 1 or 2 million, when they do that I still have a chance of breaking even or maybe making a profit.
There are 'stupid' pirates out there though.
Like the pair that stopped me and wanted 3 million credits..... EACH. That's SIX MILLION folks.
The cargo I was carrying was going to get me maybe 1 million.
Obviously somewhere along the line one of them scanned my cargo, because their request was rapidly downgraded to 2 million....split 2 ways. That I paid. I was not a happy Trader though.
All I ask is that the Pirates out there make *reasonable* requests, as soon as a Pirate asks for more than 2-4 million, I know that I may as well just try and run for it or fight it out (and I have won a few of those fights.....just) because I'm not going to make any profit on that run, depending on what I am carrying.
