I see what you mean in the circumstances you described, however, I had enough credits and wouldve been willing to pay the price of the cargo, since I would have recouped all losses at the other end.
And if a transport had appeared, it would also have made far more sense.
Possibly he tried to find a transport, and destryed the goods when none were available rather than lose them to a passerby with a large cargo bay. But again, there would be far more benefit to the pirate if I had been allowed to tractor in the goods and pay with credits or something instead.

I find credits to be too amateurish. I pirate cargo because it makes more sense. Besides, when I come with that gold to tripoli, all the wenches want me

Making a note that if I ever start trading again Ill never go where your hooks can get me. Thats just over the top.

I have seen them blown up by bombers but not much other interaction. How strong are the liners? A good point of basis would be a shire (im honestly curious and I had a shire at one point so it would be a good plane of reference).

Yes, it gives you more survivability, but you will hardly ever take out good bomber or fighter pilot. The ship is huge and easy to with both SN and normal fighter guns.

What you can do, is taking on Pirate transports and some gunboats. I actually remember fighting off Ivan in Mentira successfully, he gave up in the end :P

On topic, if you get pirated for cargo, the pirate usually has a reason good enough to do so. I sometimes give traders two choices if they claim they dont have money. Either pay up or drop cargo. Many traders suddenly find out they actually have enough money to pay:D

I find asking for more than 3 mil quite rubbish. no need to strip traders y`know. they spend 20 minutes to get 10 mils and then get robbed for 5 or more? c`mon...

My Hacker only asks for small amounts unless I run into Ageira. I usually ask them for some cargo.

also, traders carrying luxury consumer goods who run into me get in big trouble:P

Shires are easier than MOST transports if you know how to dodge .

I had a similar situation, however not in the way you think.
While playing as a my Xeno, Carl Tripley, I told a trader to drop his cargo (We were near Pueblo I think, not that it matters) and he asked if he could pay me instead. I tried to explain that as a Xeno, I couldn't do that, and in the end I couldn't take his complaining about paying instead of dropping, so I flew off before I said something I would have regretted.
But it depends on the situation, if the crgo's just gonna be destroyed, then there should be an RP reason for it (ie. being a xeno,and not liking forien goods), if the pirate's gonna take the cargo, then fine, especially if it's for RP reasons, like if it's food. However I think most pirates still stick to the old, if annoying, "TwoMilOrDia" thing.
