I'd never seen an episode, and the only things I knew from the series is what I picked up from the BSG import faction here in Discoland.

So I watched the first episode.

In short, I'm smitten and will probably not sleep until I watch all the episodes.

You'll have a long night than. Keep in mind, that it has full length movies too, chronologically between some seasons. You'd better check a timeline to not miss them.

And check some episodes of the old series form the 70's - that'll give a good laugh.

The revamped series was truly great. Personally, I think it slid slowly downhill as the seasons went on, but it was still excellent. There were two specials, movie length. The Plan which is the attack and aftermath from the Cylon point of view and....another that I just cant remember. The Plan was fantastic, but gives too much away to watch until you are finished with the series.
