Mass Effect Series
Made by Bioware.
Both 1 and 2 will keep you entertained for awhile. Very good sci-fi story with it. The character you make in one you can move over to two taking with it the appearance and actions/consequences you did in the first. Which is a neat touch.
Good Game-play. Third Person Shooting/Squad Play opposed to your usual sword n bow and creatures like elfs and dwarves.
Great Setting
Large Story with a big well developed back story for everything.
Complete freedom in both to play/progress how you want. Lots of side missions/quests and not set order to do em in.
Multiple playthoughs can be had to find out what you could have done.
Overall Great Game
Its well worth the 20 bucks. I still have to get ME2 however (Demo on Steam).

I'm going to agree with Baconsoda. I've never given a game more playthroughs than STALKER: Shadow of Chernobyl. And to make matters better, a newish mod has been released called LURK that completely makes the game worth playing. New weapons, better balance, better visuals. A sneaking system that actually works is one of the features that sets it apart from both vanilla, and any other mods available. Do yourself a favour and check it out.
And no, I'm not a part of the team that made it, I'm just a simple fanboy.
Other games listed here are great as well. I didn't get into Fallout 3 much due to limited activities. I just couldn't stay interested in it. Not to mention that vanilla was too easy, even on the most difficult of settings. I think that my dislike of Fallout 3 stems from playing STALKER. Both are post-apocalyptic role play shooters with similar elements. I just think that STALKER pulled it off in a more believable and immersive way. Play the first two before number three. They're old and their sprite graphics are far from eye candy, but the storyline and gameplay is solid. Something that I can't say for the third installment.
I hated Dragon Age. It felt like an uninspired grind. I feel the same about Diablo and other dungeon crawlers.
Deus Ex is in my top five games that I've ever played. Right after STALKER and Civilization IV.

Mass Effect 1 didn't captivate me, but the second iteration certainly did. I played that game through perhaps six times, once on the hardest difficulty. Great game and I highly suggest it.
Neverwinter Nights 1 & 2 are a pair of fantastic games. And you don't necessarily need multiplayer to keep them entertaining. Check out the modules uploaded at the vault. There are hundreds of stories available for both. Sure, some aren't the best, but you can sort through them by popularity and find the best. And there are some that I'd say are better than the original story from either game or their respective expansions.

If your going for the DS series go for the original Dungeon Siege. The second one is far worse.

I think I might try this Vault out myself - its been a few years since I've sharpened my axe.
I am surprised that you champion Neverwinter Nights 2 & label more action based RPGs such as Diablo as a grind. Diablo has no point to it other that levelling up & getting better items, but its cracking good fun & hey I'm shallow that way. In Neverwinter Nights 2 the start is very slow & I have often stopped playing & done something lighter. I have been eyeing up the box set again...

I like both. The background culture in 2 is pretty impressive, the skill trees & power attacks add to the game play, the plots are richer & I like the puzzles too.
That said I'm not overly impressed with their bonus classes, the party NPC's need to RP just before a big fight & I missed that bouncing grenade.
