I've seen the Mollys and Rogues use Huegenots, but not a Corsair Huegenot (at least not in my encounters), where abouts?

You will not find corsairs in huegenots. read the ship info card for more info.
Huegenots are used by rogues and Mollys.
What you will find is corsairs in dreadnoughts. Go to delta. You will find them there.
